Nutrition has always been a very important topic in our society. Recent research has revealed that the Mediterranean diet is one of the best as it makes legumes, cereals and vegetables a source of bioactive compounds: PHYTOCHEMICALS, substances that could bring great benefits to our body in many diseases including cancer, but their beneficial effect is limited by their bioavailability and by the very fact of being toxic if taken in large quantities as well as the quantities suitable to take advantage of their effective benefits, thus making research take steps backwards. The results of the COST-POSITIVE study highlight that optimizing the health benefits associated with food consumption will only be possible by increasing our knowledge of the main determinants of interindividual variability. Acquiring knowledge in the field involves conducting a new generation of intervention studies on human subjects using conceptual and methodological approaches suitable for analyzing variability in response to the intake of plant bioactives. It is hoped that by continuing along this line one day we will be able to exploit everything that these components can give to our body, finally putting aside the so-called "side effects"
L’alimentazione da sempre rappresenta un argomento molto importante nella nostra società. Con le ricerche recenti si è scoperta la dieta mediterranea come una delle migliori in quanto rende i legumi, i cereali e le verdure fonte di composti bioattivi: i FITOCHIMICI, sostanze che potrebbero portare grandi benefici al nostro organismo su tante malattie tra cui il cancro, ma il oro effetto benefico è limitato dalla loro biodisponibilità e dal fatto stesso di essere tossici se assunti in grandi quantità nonché le quantità adatte per usufruire dei loro effettivi benefici, facendo fare quindi dei passi in dietro nella ricerca. I risultati dello studio COST-POSITIVE evidenziano che un’ottimizzazione dei benefici per la salute associati al consumo di alimenti .Ciò sarà possibile solo aumentando la nostra conoscenza dei principali determinanti della variabilità interindividuale. Acquisire conoscenze sul campo implica condurre una nuova generazione di studi di intervento su soggetti umani utilizzando approcci concettuali e metodologici adatti ad analizzare la variabilità in risposta all'assunzione di bioattivi vegetali. Si spera che continuando su questa linea un giorno si possa sfruttare tutto quello che questi componenti possono dare al nostro organismo mettendo da parte finalmente i così detti «effetti collaterali»
