This experimental thesis work analyzes the influence of annual meteorological trends on the production cycle, ripening dynamics, and chemical composition of the must at harvest for the Verdicchio and Lacrima grape varieties, using the international varieties Chardonnay and Sauvignon for comparison. The investigation examined an eleven-year historical series (2015-2025) based on archive data from the Marotti Campi winery, located in a hilly environment in Morro d'Alba, in the Marche region. For the climatic characterization of the area, daily temperature and precipitation data simulated by "meteoblue" models were processed, calculating bioclimatic indices such as the Amerine and Winkler Growing Degree Days (GDD) and the truncated active temperature accumulation. The results highlight a high interannual variability in grape production (t/ha), strongly influenced by both seasonal meteorological trends and the structural and planting characteristics of the vineyards, such as vine age and planting density (vines per hectare). The 2024 vintage emerged as the warmest of the entire historical series, recording a peak of 2438 GDD and an average summer temperature of 26.0°C. This extreme thermal trend was associated with a generalized production crisis across all varieties, a clear advance in harvest dates (with Chardonnay harvested at an early record on day of the year 212), and a significant increase in the sugar concentrations of the must (°Babo), also driven by passive concentration phenomena due to dehydration and evaporation. The study also confirms the crucial role of the farm's topography and row exposure on phenology: South-facing plots (such as Lacrima L7) show significantly earlier ripening and harvests compared to North-facing ones (such as Verdicchio V5). From a qualitative perspective, the total acidity of the musts (expressed in g/L of tartaric acid) was strongly affected by the meteorological trends, showing maximum values in the cooler 2016 and widespread minimums in the torrid 2024. This dynamic is attributable to the degradation of malic acid via cellular respiration induced by high summer temperatures. In conclusion, given the current context of climate change and summer thermal excesses, the research highlights that the choice of the optimal harvest time can no longer be based solely on sugar accumulation. Rigorous monitoring of total acidity becomes the discriminating and priority factor, particularly in warmer vintages and for varieties structurally weaker in terms of acidity, such as Lacrima. This is essential in order to prevent sensory imbalances and safeguard the freshness, stability, and longevity of the wines in the cellar without resorting to artificial corrections.
Questo lavoro di tesi sperimentale analizza l’influenza dei decorsi meteorologici annuali sul ciclo produttivo, sulle dinamiche di maturazione e sulla composizione chimica del mosto alla raccolta dei vitigni Verdicchio e Lacrima, impiegando come confronto le varietà internazionali Chardonnay e Sauvignon. L’indagine ha preso in esame una serie storica di undici anni (2015-2025) basandosi sui dati d'archivio dell’azienda vitivinicola Marotti Campi, situata in ambiente collinare a Morro d’Alba, nelle Marche. Per la caratterizzazione climatica dell'area sono stati elaborati i dati giornalieri di temperatura e precipitazione simulati da modelli "meteoblue", calcolando indici bioclimatici quali i Gradi Giorno (GG) di Amerine e Winkler e l’accumulo delle temperature attive troncate. I risultati evidenziano un'elevata variabilità interannuale della produzione di uva (t/ha), fortemente condizionata sia dall'andamento meteorologico stagionale sia dalle caratteristiche strutturali e d'impianto dei vigneti, quali l'età delle viti e la densità di ceppi per ettaro. L’annata 2024 si è delineata come la più calda dell’intera serie storica, avendo fatto registrare un picco di 2438 GG e una temperatura media estiva di ben 26,0 °C. Tale andamento termico estremo è stato associato ad una crisi produttiva generalizzata su tutte le varietà, un netto anticipo delle date di vendemmia (con lo Chardonnay raccolto al record precoce del giorno dell'anno 212) e un sensibile incremento delle concentrazioni zuccherine del mosto (°Babo), guidato anche da fenomeni di concentrazione passiva per disidratazione ed evaporazione. Lo studio conferma inoltre il ruolo cruciale della topografia aziendale e dell'esposizione dei filari sulla fenologia: gli appezzamenti esposti a Sud (come il Lacrima L7) mostrano maturazioni e raccolte significativamente anticipate rispetto a quelli esposti a Nord (come il Verdicchio V5). Sotto il profilo qualitativo, l'acidità totale dei mosti (espressa in g/L di acido tartarico) ha risentito fortemente del decorso meteorologico, mostrando i valori massimi nel più fresco 2016 e minimi diffusi nel torrido 2024, una dinamica riconducibile alla degradazione per respirazione cellulare a carico dell'acido malico indotta dalle alte temperature estive. In conclusione, a fronte dell'attuale contesto di cambiamenti climatici ed eccessi termici estivi, la ricerca evidenzia che la scelta dell'epoca ottimale di vendemmia non può più basarsi unicamente sull'accumulo zuccherino. Il monitoraggio rigoroso dell'acidità totale diventa il fattore discriminante e prioritario, in particolare nelle annate più calde e per i vitigni strutturalmente più deboli sotto il profilo acido come Lacrima, al fine di prevenire squilibri sensoriali e salvaguardare la freschezza, la stabilità e la longevità dei vini in cantina senza ricorrere a correzioni artificiali.
