This thesis explores the transformation within the global wine sector driven by wellness trends and the rise of the "No/Low Alcohol" movement. Although European Regulation (UE) 2021/2117 formalized the commercialization of dealcoholized wines, in countries with a profound enological heritage like Italy, these products ignite a polarized debate between cultural protectionism and market evolution. This research aims to decode the subjectivity and viewpoints within the Italian wine supply chain using Q methodology, a mixed qualitative-quantitative approach designed for the scientific analysis of human perspectives. Based on a "concourse" of over 140 statements extracted from online platforms, literature, and interviews conducted at Vinitaly 2025, a balanced "Q sample" of 30 statements was established across five core dimensions (health, hedonism, economy, technique, and regulation) and sorted by 20 diverse participants (P sample). Factor analysis via KADE software extracted three main viewpoints explaining 48% of the total variance: "The Regulators", who demand strict labeling transparency to protect small wineries from industrial monopolies; "The Innovators", who view dealcoholized wine as a strategic, pro-market tool to capture younger global consumers; and "The Traditionalists", who culturally and sensorially reject the product, viewing the removal of alcohol as a threat to the heritage of wine. In conclusion, the study highlights that the future sustainability of dealcoholized wines in Italy depends on building a robust regulatory framework that harmonizes commercial innovation with the rigorous protection of traditional enological value.
Il presente lavoro di tesi analizza la transizione del settore vitivinicolo globale verso i trend legati al benessere e alla riduzione dei consumi di alcol ("No/Low Alcohol"). Sebbene la commercializzazione dei vini dealcolati sia stata legittimata dal Regolamento (UE) 2021/2117, in contesti radicati nella tradizione enologica come quello italiano l'introduzione di tali prodotti genera un forte dibattito tra timori di perdita identitaria e spinte all'innovazione commerciale. L'obiettivo della ricerca è decodificare la soggettività dei punti di vista della filiera italiana rispetto a questa categoria merceologica utilizzando la Q methodology, un approccio misto qualitativo e quantitativo idoneo a studiare scientificamente le attitudini umane. Partendo da un "concourse" di oltre 140 affermazioni raccolte da forum, webinar ed interviste sul campo al Vinitaly 2025, è stato definito un set di 30 affermazioni (Q sample) bilanciato su cinque macro-aree (salutistica, edonistica, economica, tecnica e normativa) e sottoposto al giudizio di 20 partecipanti eterogenei (P sample). L'analisi fattoriale, eseguita mediante il software KADE, ha isolato tre principali profili d'opinione che spiegano il 48% della varianza totale: i "Normatori", focalizzati sulla trasparenza dell'etichettatura per tutelare i piccoli produttori dallo strapotere delle multinazionali; gli "Innovatori", orientati al mercato e favorevoli a considerare il dealcolato una risorsa strategica complementare per attrarre i giovani consumatori; e i "Tradizionalisti", che rifiutano categoricamente il prodotto sul piano culturale e sensoriale, percependo la rimozione dell'alcol come una minaccia all'identità stessa del vino. In conclusione, lo studio evidenzia come il futuro dei vini dealcolati in Italia dipenderà dalla capacità del settore di strutturare un quadro normativo solido, capace di accogliere le opportunità di mercato e, contemporaneamente, di salvaguardare il valore storico e simbolico del vino tradizionale.
