The growing attention towards the valorization of agri-food by-products has led to the consideration of Vitis vinifera L. pomace and Crocus sativus L. tepals as sources of bioactive compounds of potential cosmetic interest. This thesis aimed to characterize the extracts obtained from these matrices and to evaluate their contribution to the enrichment of a cosmetic formulation in phenolic compounds and to its antioxidant capacity. In a first step, the aqueous extracts obtained by hot extraction were characterized by determining the content of total polyphenols and flavonoids and through four antioxidant activity assays (ABTS, DPPH, FRAP and ORAC). The results highlighted differences between the matrices considered: tepals (T) showed a higher content of total phenolic compounds and a higher activity in the ORAC assay, while grape marc (V) and the combination of the two extracts (V+T) showed a higher content of flavonoids and a higher activity in the FRAP and DPPH assays. Based on these results, the V+T combination in H₂O was selected for the next formulation step. Four cosmetic formulations were then prepared: one free of actives and extracts (Cream 1), one containing the cosmetic actives but free of extracts (Cream 2), one containing the extract V+T in H₂O (Cream 3), and one containing V+T in H₂O associated with V+T in propanediol (Cream 4). The formulations were characterized by evaluating residual antioxidant activity, lipid oxidation through the determination of conjugated dienes and TBARS, and photoprotective properties following UVA irradiation. Formulations containing the extracts showed a higher antioxidant capacity than those without; in particular, Cream 4 showed the lowest value of lipid oxidation products and the highest UV absorbance values in the analyzed range. Finally, in vitro evaluation on human dermal fibroblasts highlighted good biocompatibility of the aqueous extract. Overall, the results highlight the potential of saffron pomace and tepal extracts as ingredients of interest for enrichment in phenolic compounds and the antioxidant capacity of cosmetic formulations aimed at counteracting skin aging.
