The specific aim of this thesis was to determine the concentration of metals in the edible part of the sole (muscle tissue), in order to estimate the potential chemical risk to human health arising from the consumption of this species. Furthermore, for food safety purposes, the size and fishing season that yield specimens with the lowest levels of potentially toxic elements were identified. The results revealed the high accumulation capacity typical of benthic fish, influenced by environmental and dietary factors. The consumption of Solea solea does not expose the consumer to non-carcinogenic risks arising from the intake of potentially toxic elements. Therefore, overall, Solea solea can be classified as a nutritionally beneficial and safe food.

Abstract
The specific aim of this thesis was to determine the concentration of metals in the edible part of the sole (muscle tissue), in order to estimate the potential chemical risk to human health arising from the consumption of this species. Furthermore, for food safety purposes, the size and fishing season that yield specimens with the lowest levels of potentially toxic elements were identified. The results revealed the high accumulation capacity typical of benthic fish, influenced by environmental and dietary factors. The consumption of Solea solea does not expose the consumer to non-carcinogenic risks arising from the intake of potentially toxic elements. Therefore, overall, Solea solea can be classified as a nutritionally beneficial and safe food.| File | Dimensione | Formato | |
