EFFETTI DEGLI ESTRATTI DI ROOIBOS (A. linearis) NELLA REGOLAZIONE DEL METABOLISMO GLUCIDICO. RUOLO DELLE TECNOLOGIE DI TRASFORMAZIONE E DELLA TIPOLOGIA DI ESTRAZIONE

The study focused on the identification of the different compounds that are present in infusions of two types of Rooibos (fermented and unfermented), to determine how the concentration of these compounds is affected by the way the infusion is prepared. The other aim was to investigate the possible differences in the anti-glycemic and anti-haemolytic effects between the Rooibos samples prepared with three different methods, which take up the methods in practical use for the preparation of the infusions.

Uno degli scopi del lavoro di tesi si è incentrato sull’identificazione dei diversi composti che sono presenti in infusioni di due tipologie di Rooibos (fermentato e non fermentato), per determinare come la concentrazione di tali composti viene influenzata dalle modalità di preparazione dell’infuso. L’altro scopo è stato quello di indagare le eventuali differenze sugli effetti anti-glicemici ed anti- emolitici tra i campioni di Rooibos preparati con tre differenti modalità, le quali riprendono delle metodiche in uso pratico per la preparazione degli infusi.
