The aim of this thesis is to evaluate whether fungal infections (Monilia and Monilinia, Botrytis Cinerea) in fruits produce changes in the profile of organic volatile substances (VOC, Volatile Organic Compound). In particular, the VOC profile of healthy peaches was compared with that of peaches affected by fungal diseases. VOCs in peaches were determined by analysis SPME (Solid phase micro-extraction) - GC (GasChromatography) - MS (Mass Spectrometry). It has been found that the VOC profile is depleted of alkenes, alkanes and carboxylic acids going from healthy peach to infected, while alcohols and esters do the opposite
Lo scopo del presente lavoro di tesi è quello di valutare se le infezioni da funghi (Monilia e Monilinia, Botrytis Cinerea) nei frutti producono cambiamenti nel profilo delle sostanze volatili organiche (VOC, Volatile Organic Compound). In particolare, il profilo dei VOC di pesche sane è stato confrontato con quello di pesche affette da patologie fungine. I VOC nelle pesche sono stati determinati mediante analisi SPME (Solid phase micro-extraction) – GC (GasChromatography) – MS (Mass Spectrometry). È stato rilevato come il profilo dei VOC si impoverisce di alcheni, alcani ed acidi carbossilici passando dalla pesca sana a quella infetta, mentre alcooli ed esteri si comportano in maniera opposta.
