This thesis explores the role of nutrition education in health promotion and prevention of chronic diseases, with a focus on children and adolescents. After an analysis of epidemiological data and the Italian regulatory framework, a questionnaire survey administered to a heterogeneous sample was conducted, which showed a strong consensus on the importance of introducing nutrition education pathways in schools, despite organizational and economic obstacles. Based on the results, an educational project aimed at primary and secondary schools was developed, with theoretical and practical activities aimed at developing healthy and sustainable eating habits. The thesis emphasizes the urgency of an integrated approach involving schools, families and institutions to promote a food-conscious culture and prevent major public health risks.
La presente tesi esplora il ruolo dell’educazione alimentare nella promozione della salute e nella prevenzione delle patologie croniche, con un focus sui bambini e adolescenti. Dopo un’analisi dei dati epidemiologici e del quadro normativo italiano, è stata condotta un’indagine tramite questionario somministrato a un campione eterogeneo, che ha evidenziato un forte consenso sull’importanza di introdurre percorsi di educazione alimentare nelle scuole, pur in presenza di ostacoli organizzativi ed economici. Sulla base dei risultati è stato elaborato un progetto educativo rivolto alla scuola primaria e secondaria di primo grado, con attività teoriche e pratiche finalizzate a sviluppare abitudini alimentari sane e sostenibili. La tesi sottolinea l’urgenza di un approccio integrato che coinvolga scuola, famiglie e istituzioni per promuovere una cultura alimentare consapevole e prevenire i principali rischi per la salute pubblica.
